Asian-Style Chicken Meatballs
Last night my husband was working late and I was trying find something quick, easy and healthy to make for the kids and I. I stumbled across this recipe and let me tell it was a huge hit in my house! These Asian style meatballs are super tasty; with the lovely crunch of the green scallions and the flavor of the cilantro running through it. It's sure to be a hit in your house too! Oh by the way, these would also be a really great party food too! Healthy but yummy!

I had to make a second batch for my husband because the kids and I ate them all!
In my opinion the sauce is divine! I could use it for everything! super tasty!
What you Need:
Meatballs :
1 pound Ground chicken (you can use ground turkey or ground pork)
- 2 Scallions (finely chopped)
- 1/2 cup Cilantro (finely chopped)
- 1 tablespoon Sesame oil
- 1 tablespoon Coconut oil
- 2 tablespoon Low-sodium soy sauce
- 1/2 cup Dry and whole wheat bread crumbs
- 1 Egg (lightly beaten)
- Salt
- Pepper
Note: For gluten free omit the bread crumbs
Use Braggs Liquid Aminos for soy sauce and use 1 tablespoon
Sauce:
- 1/4 cup Brown sugar
- 1/4 cup Low-sodium soy sauce
- 1 tablespoon Rice vinegar
- 3 Slices Fresh ginger (smashed)
- Note: For Gluten Free Use Braggs Liquid Aminos for soy sauce replacement
How To:
Meatballs:
Preheat oven to 400 degrees F.
Mix together the ingredients, season with salt and pepper. Form small meatballs by rolling a spoonful of the mixture between your palms.
Arrange on a parchment lined cookie sheet and bake for 20-25 minutes, until browned and cooked through. Serve with toothpicks for dipping.
Sauce:
To make sauce, heat soy sauce and vinegar in a small pot over med-low heat. Slowly add brown sugar and cook until it has dissolved.
Add ginger and simmer 3 minutes, stirring frequently, until the sauce begins to thicken. Serve with the meatballs.
